I love healthy homemade bread and this book is one to use. The only thing is that I don't understand all the percentages instead of cups, etc. The few recipes at the very end of the book are ones I understand. This a review for Story Cartel.
This book brings the idea of wholesome, beautiful, "I-can-only-buy-this-in-Europe" bread, into your oven, onto your table table, and inside your belly. Even compared to other sourdough-specific books, Birdsong Bread simplifies the process down to a few inexpensive pieces of equipment so you can get started right away. His recipes are equally humble and all springboard off of his original formula. His non-sourdough formulas (naan, brioche, whole-wheat, etc) are equally detailed and delicious! All good things take time, so study up, relax, and listen to your bread sing!

P.S. His brioche recipe is the best I've ever found.
I used the Cheese bread recipe from Luke Och's Birdsong Bread Book, to make this yummy loaf. Perfect. I have a loaf of Olive bread in the oven at this moment, in it's final stage of baking. If I had anymore flour in the house I would have baked more. In the case of both loaves of bread my 100% was 20oz.wt white flour.

The book is a pleasure. I am an experienced baker and found the variety of breads sure to satisfy many tastes. I am not a major fan of most sourdough breads, and so substituted the suggested leavening with a standard yeast %. The one thing, I might have changed was the call for Herbs de Provence, unless I missed it entirely, I did not see which herbs those were. As consequence, I thought about the olives and added a pleasing mixture of herbs I had on hand.

I love baking fresh bread and this book was a great opportunity to add to my repertoire. The author is very thorough and the writing is engaging. I enjoyed learning about making a sourdough culture though I think I've been spoiled by using the Artisan Bread in Five Minutes a Day method (just a little bit). The recipes are varied and there are no ingredients that are hard to find. I'm very happy to have this book in my collection and can't wait to try some of these out with my family.
This book represents home baking as a true labor of love. The author is clearly passionate about bread and does an excellent job of explaining the science behind breads we may take for granted on a daily basis and how we might use that knowledge to bake a better loaf. There is a creative array of bread recipes for both novice and experienced bakers to try - everything from a simple white bread to the more complex flavor of cornmeal-rye-coriander. Along with the clear instructions and interesting recipes are a series of beautiful photographs (also by the author) that illustrate the stages and varieties of breads described. Although I'm not quite ready to make my own sour dough starter (the author includes a section on this if you are so inclined), I look forward to trying out some of the breads like "Open Sesame" and "Something Walnut This Way Comes". This book is a great resource for someone who wants to learn about making honest bread from scratch - a great gift for the bread lover or foodie in your life.
Birdsong Bread is a little gem of a book that has something for all bread lovers. In clear simple words, Luke Och describes both the art and science of bread baking. I gained a deepened appreciation for the labor of love that baking bread can be, and an understanding of why artisan bread is so expensive, and so good.

With recipe titles like Buck Wild and Wait a Millet, it’s a delight to read, even if you are not a bread machine baker ready to go to the next level. After chuckling over pun after pun, and salivating over the beautiful photographs, I worked my way through the book backwards, starting with eight really good seasonal bruschetta recipes. Treat yourself and your fellow bread lovers to this book!
